5:30 – 5:45: Arrival time for your welcome cocktail and amuse bouche

6:00 pm: Course 1 and wine presentation

Amuse

Salchichón Ibérico de bellota with marinated olives.

First

Andalusian style gazpacho with saffron oil.

Second

Salad of salt cod, orange segments, olives, and toasted almonds.

Third

Valencia rice with squid ink, chorizo, scallops, shrimp, fennel frond gremolata, charred scallion aioli.

Fourth

Bison braised in duck fat, roasted pepper relish, saffron aioli, duck fat tosta.

Dessert

Cheese course with honey and herb crostini,
fresh fruit.
